Rich Orange Filling

Mix together
in saucepan . . . . . .

1 1/2 cups sugar
4 1/2 tbsp. cornstarch
1/2 tsp. salt
1 1/2 cups orange juice
2 tbsp. lemon juice
3 tbsp. butter

Bring to a rolling boil and boil 1 minute, stirring
constantly.

Slowly beat half of the
hot mixture into . . . . . 4 egg yolks, slightly beaten
Blend into remaining mixture in saucepan. Cook
1 minute more, stirring constantly. Remove from
heat.
Blend in . . . . . . . . . . . 3 tbsp. grated orange rind
Chill before usig.

Variation: Use frozen concentrated orange juice diluted
according to directions on can instead of orange juice.
For a stronger flavor, dilute concentrated orange juice
using only half as much water as called for on the can.
